Garlic Sesame Soba Bowl by realizing_fitness🍜
This saucy soba noodle bowl is packed with flavour and features stir-fried mushrooms, kale, edamame and radishes in a deliciously garlicky sauce.
Ready in less than 20 minutes, here’s what you’ll need to make it happen:
100g soba noodles
2 tbsp neutral cooking oil
200g mushrooms, sliced
160g edamame, frozen
2 large handfuls kale, roughly chopped
4 radishes, sliced
1 tbsp tamari
salt + pepper, to taste
sliced spring onion
3 cloves minced garlic
2 tsp toasted sesame oil
2 tsp sriracha
2 tbsp tamari
1 tbsp dark soy sauce
1 tbsp maple syrup
1 tbsp lime juice
In a small bowl, stir together sauce ingredients.
Cook soba noodles in a pot of boiling water, according to package instructions. I cooked mine for a minute less than required.
In a wok or frying pan, heat oil over medium high heat cook, cook mushrooms until golden on both sides. Add radishes and cook for a few minutes.
Add edamame and cook until warmed through and bright green. Season and add tamari.
Stir in kale and cook until it begins to wilt.
Drain soba and return to pot. Toss in 3/4 of your sauce.
Divide into 2 bowls and top with veggie stir-fry. Drizzle with remaining sauce. Sprinkle with sesame seeds and spring onion.
