Garlic Sesame Soba Bowl by realizing_fitness🍜⁣

⁣This saucy soba noodle bowl is packed with flavour and features stir-fried mushrooms, kale, edamame and radishes in a deliciously garlicky sauce.

Ready in less than 20 minutes, here’s what you’ll need to make it happen:⁣
⁣⁣
⁣The Bowl:⁣
⁣100g soba noodles⁣
⁣2 tbsp neutral cooking oil⁣
⁣200g mushrooms, sliced⁣
⁣160g edamame, frozen⁣
⁣2 large handfuls kale, roughly chopped ⁣
⁣4 radishes, sliced⁣
⁣1 tbsp tamari ⁣
⁣salt + pepper, to taste ⁣
⁣sesame seeds ⁣
⁣sliced spring onion⁣
⁣⁣
⁣The Sauce:⁣
⁣3 cloves minced garlic⁣
⁣2 tsp toasted sesame oil⁣
⁣2 tsp sriracha⁣
⁣2 tbsp tamari⁣
⁣1 tbsp dark soy sauce⁣
⁣1 tbsp maple syrup⁣
⁣1 tbsp lime juice ⁣
⁣⁣
⁣In a small bowl, stir together sauce ingredients. ⁣
⁣⁣
⁣Prep veggies. ⁣
⁣⁣
⁣Cook soba noodles in a pot of boiling water, according to package instructions. I cooked mine for a minute less than required. ⁣
⁣⁣
⁣In a wok or frying pan, heat oil over medium high heat cook, cook mushrooms until golden on both sides. Add radishes and cook for a few minutes. ⁣
⁣⁣
⁣Add edamame and cook until warmed through and bright green. Season and add tamari. ⁣
⁣⁣
⁣Stir in kale and cook until it begins to wilt. ⁣
⁣⁣
⁣Drain soba and return to pot. Toss in 3/4 of your sauce. ⁣
⁣⁣
⁣Divide into 2 bowls and top with veggie stir-fry. Drizzle with remaining sauce. Sprinkle with sesame seeds and spring onion. ⁣
⁣⁣
