⁣Here’s how to make it:⁣
⁣⁣
⁣I package palmini_official rice⁣
⁣1-2 tbsp vegan butter (or oil of choice)⁣
⁣1 lime, juiced⁣
⁣1/2 cup cilantro, chopped⁣
⁣salt, to taste ⁣
⁣160g leftover pulled tofu⁣
⁣1/2 cup pico de gallo or other fresh salsa⁣
⁣4 tbsp chipotle beans (see toast post from the other day for recipe)⁣
⁣1 lime, sliced (for garnish)⁣
⁣cilantro, for garnish⁣
⁣corn tortilla chips ⁣
⁣⁣
⁣In a frying pan, heat vegan butter over medium heat. Add rinsed and drained rice. Cook until heated through. Add lime juice, cilantro and salt. Stir. ⁣
⁣⁣
⁣I reheated my tofu in the same pan as my rice. ⁣
⁣⁣
⁣Divide rice and tofu between 2 bowls. Add pico de gallo, chipotle beans, lime wedges and tortilla chips. Sprinkle with cilantro and enjoy!⁣
